• 1 pound swiss chard, spinach, or bok choy (chopped)

Cook and thoroughly drain.  If using swiss chard or bok choy, trim the stalks from the leaves & initially cook chopped stalks, then add chopped leaves after stalks begin to become tender.

  • 4 eggs (beaten)
  • 1 cup milk
  • 1 cup swiss cheese or another cheese (shredded)
  • 1 cup bread (cubed)
  • 1/2 cup green onions (sliced)
  • 1/4 cup parmesan cheese (grated)

Combine with cooked greens. Pour into a greased 2-quart baking dish. Cover and bake in preheated oven at 375 until set, 30-35 minutes.
