Mashed potatoes are a great food for sneaking in other random vegetables like kohlrabi, turnips, or rutabaga. Just peel & cut up all your desired veggies, boil in water until tender, and mash, adding butter, salt & pepper as desired. You can also add chives if you wish.

If you make a big batch of mashed potatoes/veggies and have leftovers, a nice option for using them is to make potato pancakes. Take your leftovers and add an egg and some flour so that the consistency is not too wet. Fry them on a griddle & top with whatever your heart desires: ketchup, sour cream, etc.

These make great snacks; our son, Tsepo, couldn’t seem to get enough of these pancakes!
