Parmesan Potatoes

  • 6 large potatoes
  • 1/4 cup Parmesan cheese
  • 1/8 tsp pepper
  • 1/4 cup flour (any kind will do-we use whole wheat)
  • 3/4 tsp salt
  • 1/3 cup butter
  • parsley (optional)

Peel potatoes (if short on time, you can leave skins on & it tastes fine too); cut into pieces. Combine flour, cheese, salt & pepper in a bag; add potato pieces and shake. Melt butter in a 9×13 glass pan. Place potatoes in a single layer in pan. Bake at 375 for 1 hour, turning once during baking time. Sprinkle with parsley.
