- 1 1/2 to 2 pounds small potatoes
- 1 Tbsp olive oil
- 1/2 tsp dried rosemary (or 1 tsp fresh)
- 1/4 tsp coarse sea salt
- pinch of dried thyme
- 4-5 cloves garlic, minced
- Scrub potatoes & put in slow cooker (If you’re using larger potatoes, cut them in smaller chunks first).
- Drizzle with olive oil, sprinkle with herbs and garlic. Toss the potatoes to coat them.
- Cover and cook on high for 3 to 3 1/2 hours.
