• 1 pound sausage
  • 1/2 cup chopped onion
  • 4 cups chicken broth
  • 4 cups potatoes, sliced with skins on
  • 3 cups water
  • 2 cups kale/collards/spinach/bok choy
  • 1/3 cup whipping cream (we substitute 1/3 cup goat’s milk)
  • salt & pepper to taste

Cook sausage and onions in large pot. Add broth, potatoes and water, then bring to a boil. Reduce heat and simmer 10-15 minutes. Stir in greens and cook a few minutes. Stir in cream/milk. Season with salt & pepper.

This is a great soup that’s fast to prepare!
