Ingredients

  • 8 quarts tomatoes
  • 2 Tbsp dried basil
  • 2 Tbsp dried parsley
  • 4 Tbsp dried oregano
  • 1 Tbsp paprika
  • 1 Tbsp sugar
  • 3 medium onions
  • 1 head of garlic, minced
  • 2 medium bell peppers
  • 2 Tbsp olive oil

Directions

  1. Peel tomatoes & chop, put in large pan. Add spices & sugar then bring to a boil. Simmer about 10 min.
  2. Mince garlic and chop onion & pepper. Sauté in oil until just soft.
  3. Add tomato mixture and simmer another 10 minutes. Do not overcook. Before placing sauce in jars, add 2 Tbsp lemon juice and 1 tsp salt per quart. Process in canner as directed-about 40 minutes.

When I heat up some spaghetti sauce for supper, I add a 6 oz can of tomato paste in the pan to thicken it up a little.
